I’ll say that, in my opinion, one of the harder meals to take photos of is anything sandwich-related. For real. I tried to take photos of this Banh Mi sandwich in stages, but they weren’t very good. I tried taking them with bites missing, and while it was nice to enjoy the sandwich while I worked, those weren’t the best either.
Regardless of these photos, these Spicy Tofu Banh Mi Sandwiches taste amazing! When I originally made these sandwiches I had been on a stay-at-home-and-chill path. I’m really glad I tried my hand at these. They’re super-easy to make and deliver BIG on flavor.
Spicy Tofu Banh Mi Sandwiches
This is a hearty sandwich loaded with perfectly balanced contrasts: the crunchy veggies and the soft tofu. The spicy spread. The sweet and tangy marinated veggies (including the heat from the jalapeños and the cool from the cucumbers and cilantro). This banh mi is piled high with ingredients that you can really wrap your hands around and dig into.

Most banh mi sandwiches are made with pork or some type of meat. Tofu works really well, too, and I used a prepared, Asian-flavored baked tofu. I swapped the traditional daikon radish for regular red radishes since they were easier to come by and I thought they added great color.
My first version ended up being really spicy because I’m always heavy handed with the spicy chili crisp paste. The beauty of the level of spiciness is that it’s up to you to decide how you want to handle things.
