An Easy, Colorful and Delightful Holiday Appetizer
The colors of Avocado Hummus are perfect for a seasonal celebration! Hummus is an easy, go-to dip, so why not pair it with the great taste and texture offered by avocados?
Are you dashing through the snow? Even if you don’t have snow in your parts, this is the time of year when most everyone is rushing around, trying to get last minute shopping finished, and hitting the grocery stores to stock up on ingredients for cookies, parties and the big holiday meal.
Make one thing easy on yourself whether you’re planning a party, or you need to feed the gang gathered at your place: throw together Avocado Hummus and serve it up with toasted pita, crackers or veggies. It’s easy to whip up, it’s colorful, and tastes great! I love the idea of adding avocado to hummus!
Recipe for Avocado Hummus
Serves 6
INGREDIENTS
- 1, 16-ounce can garbanzo beans (chickpeas), drained and rinsed
- 2 avocados, pitted. Scoop the avocado out with a spoon.
- 2 garlic cloves, chopped
- 3 tablespoons lemon juice, more to taste
- 1 tablespoon tahini
- Salt and ground black pepper, to taste
- 2 tablespoons fresh parsley, torn
- 3 tablespoons olive oil (2 to mix in the hummus, and 1 to drizzle over the hummus), or to taste
For the garnish:
- 1/2 cup grape tomatoes, cut in half
- 2 tablespoons fresh parsley, torn
- 1 tablespoon olive oil
INSTRUCTIONS
- Add all the hummus ingredients to a food processor and blend, pulsing a little at a time.
- Stop once or twice and use a spatula to push down some of the mixture.
- Continue to blend until you reach the consistency you like.
- Taste and season appropriately with more salt, pepper or lemon juice.
- Place the mixture in a serving bowl and drizzle 1 tablespoon olive oil over the hummus.
For the garnish
- In a small bowl, mix the grape tomatoes and parsley with the 1 remaining tablespoon of olive oil, and spoon over the top of the hummus.
