I was inspired to make these creamsicles the day before I was supposed to have my wisdom teeth removed. But, since I rescheduled my appointment (for the third time — yes, I’m a big baby!), it will now just be a treat that’s perfect to serve anytime this summer. That’s more fun anyway!
So, yeah. I needed to have my wisdom tooth removed. I had rescheduled the procedure three times: once because of my own nervousness, a second time because my husband was traveling (who would take care of me?), and a third time…well…I felt a cold coming on, and who wants to be sick and have surgery at the same time?!
Since I sort of had a cold, I thought the vitamin C in these pops (pineapple is loaded with vitamin C) would help get me on the road to recovery in no time. But guys, they’re so good!

I used Greek yogurt to add the “creamy” to these creamsicles, and frozen juice concentrate and fresh pineapple pieces for the sweetness. I wanted to give these creamsicles more of a grown-up feel from the pops from our childhood, so I added cardamom to the mix. I’m so glad I did. These Pineapple-Orange & Cardamom Creamsicles turned out terrific: the cold and creamy paired perfectly with the aromatic cardamom.
You don’t need an excuse to enjoy Pineapple-Orange & Cardamom Creamsicles. You should make them while the weather is h-o-t!

Pineapple-Orange & Cardamom Creamsicles

Ingredients
- 2 cups plain Greek yogurt
- 6 ounces pineapple-orange juice concentrate, thawed
- 1 tablespoon orange zest, plus more, if desired (see note below)*
- 3/8 teaspoon ground cardamom
- 1/3 cup small diced pineapple
Instructions
- Whisk together the yogurt with the pineapple-orange juice concentrate.
- Add the orange zest and cardamom to the mixture, then fold in the pineapple.
- Pour the mixture into the molds, and add wooden or plastic sticks into the center of the molds. Freeze upright for at least 6 hours. *Before freezing, if you’d like, add orange zest over the tops of the creamsicles (which is actually the bottoms of the frozen creamsicles).
- To remove the creamsicles from their molds, run them under warm water for a few seconds (take care not to run the tops under water) to help loosen them.
- Serve immediately.
