Chips and salsa for breakfast? You bet! What could be more fun? Skillet Pork Migas with Roasted Tomatillo Salsa is flavorful and filling, and as promised, you’ll find both chips and salsa in the mix.
One of the best things about this dish (aside from the fact that my husband makes it for us often as a weekend specialty) is that you can serve it about a million different ways. Migas is a traditional Tex-Mex breakfast dish that includes scrambled eggs and strips of corn tortillas, so you can imagine the variations you can create.
We like to make our migas with the broken tortilla chips from the bottom of a bag – sort of a “no chip left behind” philosophy. Salsa is, therefore, a given to include in this recipe, and when tomatillos are in season, there’s no question that we’re eager make a batch or two of Roasted Tomatillo Salsa.
Tomatillos look like smallish green tomatoes, and they’re covered in a papery husk that you need to remove before using. They’re often used in a lot of different green sauces and salsas like the one for this recipe.
My approach to salsa: why open a jar when you can easily make your own, especially when seasonal ingredients are ready for the taking? The Roasted Tomatillo Salsa doesn’t take long to make, and the results are definitely worth the extra bit of time. Warning: make an extra batch to enjoy later with chips. If you don’t, you’ll wish you had!

Serves 6
Migas makes a fun and hearty breakfast dish, but you could serve this any time of day!
Ingredients
- 1 tablespoon vegetable oil
- 8-10 medium-sized tomatillos, husk removed, washed and dried
- 3 garlic cloves, skin on
- 2 tablespoons lime juice
- 2 green onions, ends trimmed, chopped small
- 1 jalapeño, seeds and membrane removed, diced small
- 1-1/2 tablespoon fresh cilantro, chopped (plus extra for garnish)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon vegetable oil, divided
- 1 (12-ounce) package Jones Dairy Farm All Natural Pork Sausage
- 5 eggs, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup Roasted Tomatillo Salsa
- 1/3 cup crumbled tortilla chips
- 4 ounces Mexican-style cheese, shredded
- 2 ounces Cotija cheese for crumbling
Instructions
- Add the tomatillos and the garlic to a baking pan and drizzle with the vegetable oil. Place the pan in the oven under the broiler (several inches from the heat). Cook for several minutes until the tomatillos begin to char and soften. Turn the tomatillos and cook for several more minutes.
- Remove from the oven and allow to cool to the touch.
- Remove the garlic from their skins and transfer all the ingredients to a blender. Blend until slightly chunky. Taste and adjust the seasonings, as needed.
- If you think the salsa is too thick for your liking, add a few tablespoons of water to the mixture, and continue to blend. You could add a bit more water if you’d like, but start with a smaller amount.
- Place a skillet over medium heat. When hot, add 1/2 tablespoon (or a bit less) of the oil. Once the oil is hot, add the Jones Dairy Farm All Natural Pork Sausage to the skillet, and break it into pieces with the back of large cooking spoon.
- Cook for several minutes until the sausage has browned. Remove from the heat. Transfer the sausage to a small bowl, and set aside.
- In a medium bowl, add the eggs and season with the salt and black pepper.
- Add 1/3 cup of the salsa to the egg mixture, and stir to combine. Set aside.
- Place a large skillet over medium heat. When hot, add the remaining vegetable oil. When the oil is hot, add the egg mixture to the skillet.
- Let the eggs set just slightly for a minute or so, then add the crumbled pork to the skillet. Stir to combine, and add the crumbled tortilla chips. Cook for another few minutes, then add the shredded cheese. Lightly stir the mixture so the cheese melts and combines with the other ingredients.
- Remove from the heat, sprinkle with the Cotija cheese and garnish with cilantro. Serve immediately.
- Serve extra salsa and soft tortillas on the side if you’d like.
Notes
This is a great dish for breakfast! I use crunched up tortilla chips to mix in, but I also save some chips and make an extra batch of the Roasted Tomatillo Salsa for dipping!
