Since it’s Halloween, I thought it would be fun to make some candy and share with the folks at work (always a good excuse to bake or make treats!).
As you can see in some of the photos, I added a few Halloween decorations to these bars.

Personally, I wanted to add little google eyes to these bars for Halloween, but I couldn’t get my hands on any.
I’ve made candy in the past, like the famous Peanut Butter Buckeye Candy, Peanut Butter-Toffee Chocolate Eggs, and Buttermilk Fudge with Orange & Rosemary, and they’ve all been easy to make, like these copycat bars.

Easy Copycat Payday Candy Bars
Candy-making can often take patience (and maybe a few attempts) to get things right, but these candy bars couldn’t be easier to make.
All the effort needed to make these involves a bit of melting time, a bit of time in the fridge and, voilà! Easy Copycat Payday Candy Bars are crunchy and chewy and sweet and salty – what a great combo!
I wanted to make a fun treat, but I wasn’t interested in baking (I had just gotten back from a road trip and was tired). I scooped up the few ingredients needed for these and went about my way.
Once you’re ready to plate them, you can cut them into any size you’d like: smaller to share a bite with a group of people, or larger if you’d like to indulge.

Serves Makes 16 large bars
Ingredients
- 2-1/4 cups dry roasted peanuts
- 3 tablespoons butter, melted
- 1, 11-ounce package peanut butter baking chips
- 1, 14-ounce can sweetened condensed milk
- 6-8 ounces mini marshmallows
- Nonstick cooking spray
- Optional: Themed decorative picks
Instructions
- Lightly spray a 9/13-inch baking dish with the nonstick cooking spray.
- Evenly spread about 1 cup of the peanuts to the bottom of the dish.
- In a large, microwave-safe bowl, add the butter and the peanut butter chips. Microwave them for about 20 seconds until melted. If they’re not quite melted, continue in the microwave in 10-second increments. Stir to combine.
- Add the sweetened condensed milk to the melted chips mixture. Stir to combine.
- Add the marshmallows to the mixture and stir to combine so all the marshmallows are well-coated.
- Transfer the mixture to the baking dish by dolloping large amounts across the dish. Coat your hands with a small amount of the nonstick cooking spray and press down on the mixture to help spread it out evenly.
- Add the remaining peanuts over the top of the mixture.
- Refrigerate to chill the mixture. Before serving, remove from the refrigerator and let them stand for about 15 minutes.
- Cut evenly into any size bar you’d like.
- Refrigerate or freeze any unused bars. First place the bars on parchment paper then add them to freezer bags. Allow them to sit for a bit until eating.

Cut these bars on the smaller side if you're serving to a group.
