Spicy Sloppy Farro Joes with Creamy Cabbage-Apple Slaw is a tasty meatless dish you’ll reach for often. Can I just say, big flavor! I replaced the ground beef with farro and mushrooms for an easy-to-make sandwich that’s super hearty, too. Oh, and big flavor!
I love cooking with farro. Have you tried it? It’s a versatile ancient grain that’s soft, chewy, and full of protein, fiber (it has 8 grams of fiber compared to 5 for brown rice) and minerals. Rather than reach for a soy substitute to make these sandwiches meatless, I thought farro would be a good option – and it is! I mixed it with mushrooms and the standard seasonings for a base sauce (and made it spicy with chipotle paste, ’cause that’s how I roll).
My husband recently made a fabulous slaw, and I had him whip up another batch for these sandwiches. I topped my Spicy Sloppy Farro Joes sandwich with the Creamy Cabbage-Apple Slaw, while others ate it on the side. I also served this mixture as sliders, using mini sandwich buns.
These sandwiches are perfect on a Meatless Monday, or any day of the week. Consider serving them when you’re set to watch the football or basketball game. Make them the night before Thanksgiving instead of ordering pizza (that’s pretty standard in my home). Speaking from experience, they also make a great take-to-work lunch.

You'll love this meatless version of a classic sandwich. You can easily double the recipe to serve more friends and family!
Ingredients
- 8 ounces shredded cabbage
- 1 large apple, cut into matchstick-sized pieces
- 1/3 cup mayonnaise
- 2 teaspoons cider vinegar, more to taste
- 2 teaspoons sugar, more to taste
- 2 tablespoons olive oil
- 2 cups cooked farro
- 1 cup diced mushrooms
- 1/4 cup white onion, diced
- 2 garlic cloves, minced
- 2-1/2 tablespoons tomato paste
- 1 (15-ounce) can tomato sauce
- 1/2-2/3 cup water
- 2 tablespoons chipotle paste (or diced chipotle peppers in adobo sauce)
- 2 tablespoons soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground black pepper, plus extra to season the slaw
- Sandwich buns (I used slider-sized buns)
Instructions
- To make the slaw, combine the cabbage, apple, mayonnaise, vinegar, and sugar. Toss to combine. Taste, and adjust the seasoning as needed. Refrigerate until ready to use.
- Add the olive oil to a large skillet over medium heat. When hot, add the onion and cook for 3-4 minutes, or until it softens. Add the garlic and cook for about 30 seconds. Add the tomato paste and mix it with the onion and garlic until it softens and breaks down.
- Add the tomato sauce, 1/2 cup water (start with 1/2 cup, as you can use a bit more later as needed), chipotle paste, soy sauce, salt, cumin, coriander, and black pepper. Stir to combine.
- Increase the heat slightly and cook for 8-10 minutes or until the mixture thickens a bit. Reduce the heat to medium-low. If you think the sauce is too thick, add a bit more water at this point and stir. If you add more water, taste the mixture to determine if you need to adjust the seasoning slightly.
- Add the mushrooms and cook for a few minutes. Add the farro, stir to combine, and turn off the heat. Let the mixture sit for a few minutes.
- Serve warm on the buns, and either top with the Creamy Cabbage-Apple Slaw, or serve it on the side.
