Tuna Salad with Egg is fabulous for sandwiches or to serve with your favorite salad greens (and even on crackers). It’s easy to make and filling, too. I love it for breakfast, lunch, or dinner!
I love both tuna salad, and egg salad. I know, I know. Both of these seem to be love it or hate it for a lot of people, but I love a sandwich made with either of them.
When my mom makes — I’m not sure what to call it — tuna salad, I guess? Anyway, when she makes tuna salad, she always includes hard-boiled eggs, which I love.
You know when you get that craving and you just have to have something? Unfortunately I can’t just pop over to my mom’s on a moment’s notice, so I made my own (mom’s always tastes better, though, right?).
It doesn’t happen as often as I’d like, but I had done a little meal prep so I had hard-boiled eggs on hand. Lucky me! I was able to make tuna salad with egg shortly after my craving hit.
Along with the tuna and eggs, I added a few radishes, celery, onion and garlic, and mayo. So simple and so tasty!
I love the extra crunch and zing of the radishes. Add diced red bell pepper to this salad if you don’t have radishes on hand. They’re suitably crunchy, too.
If you like eggs my Jalapeño Deviled Eggs are a delight, and great for serving at barbecues and holidays. I love the bit of heat from the jalapeños.
I just recently made a simple frittata dish — Zucchini-Thyme Frittata for Two — with just three eggs on hand. It’s perfect for any meal.
If you’d like a truly vegetarian sandwich spread, try my Chickpea Salad Sandwiches. It’s another favorite of mine!
When the craving hits, nothing is better on a sandwich or with salad greens than tuna salad with egg. It’s filling and flavorful and you can have it ready in no time!
