Spinach and Couscous Salad with Strawberries, Avocado & Honey-Lime Dressing is an ideal salad for the summer (don’t fret — there’s still time to make and enjoy it)! The strawberries and avocado are the wonderful “extras” in this salad, and the dressing is simply scrumptious. It’s a new favorite of mine!
At a family picnic recently I came across a tasty salad that inspired me to make this Spinach and Couscous Salad with Strawberries, Avocado & Honey-Lime Dressing.
I love a salad studded with sweet strawberries, and bonus points for couscous that keeps it filling! I tend to think of strawberries as an ingredient used in or with dessert, but it’s a fruit packed with a nutritional punch.

Not only is this a fresh and fabulous salad for the summer (and it’s perfect to take to a get together), but the honey-lime dressing is amazing!
I’m sure you’ve seen strawberries and spinach together on occasion. I’ll admit that when I first came across it, I thought it seemed strange, but it’s really a treat for a seasonal salad. Cold couscous tossed in the mix is a little what you’d enjoy in a pasta salad. The pine nuts add the flavorful crunch!

I’m willing to bet you’ll love the summer’s juicy strawberries and the creamy avocado tossed into the mix in this dish. The Israeli (sometimes called pearl) couscous adds heartiness to the salad and makes a nice alternative to traditional pasta salads.

Ingredients
- 3 cups cooked Israeli (pearl) couscous
- 6 ounces fresh spinach
- 4 small avocados, cut into chunks
- 2-1/2 cups sliced strawberries
- 2 ounces toasted pine nuts or almonds
- 1/3 cup fresh lime juice
- 1/4 cup honey
- 1/2 teaspoon Dijon mustard
- 1-2 cloves garlic
- Salt and black pepper to season
Instructions
- To make the dressing, combine the lime juice, honey, Dijon mustard, garlic, and salt and pepper. Whisk to combine.
- Combine the couscous, spinach, avocados, strawberries, and pine nuts in a large bowl.
- Whisk the dressing again, then pour it over the salad ingredients and toss to coat.
