Everyone loves a great sandwich, right? Open-faced sandwiches can be just as filling and satisfying as the sort you wrap your hands around. Take this Greek-Style Avocado Toast, for example. Open-faced sandwich? Check. Filling? Check. Delicious? Check, check, check, check!
Avocado toast has been, and still is, everywhere, and that’s just fine by me! I love it as an option when I’m eating out, especially if I’m at a restaurant with a so-so menu. You can’t go wrong with avocado toast.
I’m an avocado fanatic. Give me alllll the avocado! My husband, on the other hand? Not so much (sometimes I think I’ll never understand him). It makes me sad when I make guacamole and I have to eat it all by myself. Ha! Who am I kidding?!
Sometimes I want a little more out of my avocados than just guacamole, though. That’s when I slather it over toast and enjoy.
I’m always thinking about what might go well with avocado toast, and recently decided that Greek-inspired ingredients would be a hit. Oh, and they were! So many great flavors in one open-faced sandwich.

Ingredients
- 4 slices bread of choice, toasted
- 3 large avocados, peeled, pit removed, and cut into chunks
- Juice from 1/2 small lemon
- 1/4 teaspoon ground black pepper
- 3-4 tablespoons crumbled Feta cheese
- 1/4 cup diced cherry tomatoes
- 3 tablespoons diced red onion
- 3-4 tablespoons black Greek olives, chopped
- Olive oil to drizzle
- Optional: lemon zest
Instructions
- Add the avocado to a medium bowl. Add in the lemon juice and ground black pepper. Use a fork to mash and combine the avocado with the juice and pepper.
- Toast your bread.
- Spread the mashed avocado over the top of the toast. Add the Feta, tomatoes, onion, and olives to the avocado. Drizzle with a bit of olive oil and lemon zest, if desired.
- Serve immediately.
