I was recently transported back to the days when I was a kid and my mom or dad would make this Easy Italian Fish Stew. I was texting with one of my cousins a few weeks ago and she mentioned she was having dinner with her dad, and that he was making fish stew.
Instantly, my head filled with visions of a rich, red broth. I could feel the tender potatoes melting in my mouth. I was drooling over homemade bread that would absorb all the wonderful flavors at the bottom of a bowl.
I couldn’t stop thinking about it for the next several days so of course I made my own Easy Italian Fish Stew. And now I’m sharing it with you because it’s too good to keep to myself!
Easy Italian Fish Stew
Some people might think this is a strange stew. It’s a pretty traditional Italian stew, however, with only a few simple ingredients. It’s so big on flavor, and I can barely describe it! My family made this often on Fridays during the Lenten season to enjoy as a meatless meal.
The potatoes take a short time to cook, and the best part is that the fish only takes a handful of minutes to cook, too. Dinner will be on the table before you know it!

Ingredients
- 2 tablespoons olive oil
- 1/4 cup diced white onion
- 3 garlic cloves
- 2 tablespoons tomato paste
- 1 (10 ounce) can tomato sauce
- 3 cups vegetable broth
- 1 teaspoon dried thyme, plus extra for garnish
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon red pepper flakes
- 1-1/2 cups diced russet gold potatoes
- 10-12 ounces fresh cod, cut into 2-inch pieces
Instructions
- Add the oil to a Dutch over or large pot over medium heat. When hot, add the onion and cook for a few minutes or until it begins to soften. Add the garlic and cook for about 30 seconds.
- Add the tomato paste and mix it in with the other ingredients until it’s broken down. Add the tomato sauce, vegetable broth, thyme, rosemary, salt, black pepper, and red pepper. Add the potatoes and cook, covered, for about 10 minutes, or until they soften. Make sure the liquid covers the potatoes.
- Add the fish to the Dutch oven and cook, covered, until opaque and cooked through, about 5 minutes.
- Serve garnished with thyme and additional red pepper flakes and black pepper.
