Have you ever had chocolate covered pickles? Whoa! What a treat: sweet, salty, chocolatey!
My husband was back in our hometown of Akron, Ohio, recently. I happened to be cruising through Facebook and saw the local paper post about a hometown store that was selling chocolate covered pickles.
I instantly thought of my nephew, Joe. He introduced us to Screamin’ Dill Pickle Pringles – one of our favorite salty snacks! Joe also likes to cook and concoct with me whenever I’m back home at my mom’s.
Chocolate Covered Pickles with Homemade Magic Shell
It just so happens that we’ll be headed to see Joe graduate from the Air Force Reserve Basic Military Training soon. I’m so excited and so proud of him! I was trying to think of a fun treat to bring him, and thought those chocolate covered pickles would be ideal.
I’ll also consider making my Blueberry-Pistachio Marshmallow Cereal Bars. These will travel well, and everyone loves them!
My Peanut Butter Buckeye Candy treats are fun, too. I mean, what’s not fabulous about peanut butter and chocolate candy?
Meanwhile, I asked my husband to pick up a box of the chocolate covered pickles so we could take them along to my nephew.
Unfortunately, by the time he made it to the store, he was told they sold out within an hour. What?? How is it these are so popular?
How hard could these be to make myself? Turns out, not at all, and now I have a new favorite treat in chocolate covered pickles with homemade Magic Shell!
I decided to make homemade Magic Shell to dip these in because otherwise, I’m not sure the chocolate would harden. What a mess that would be!
If you don’t know, Magic Shell is the liquid, chocolaty sauce that goes over goodies like ice cream and frozen yogurt, and hardens once it coats the cold, frozen surface. What fun to use a spoon to crack that thin coating to get to the ice cream underneath!
Keep in mind these pickles won’t do well to sit around for too long, or if it’s too warm. I’m making a new batch to take Joe, and I’m going to try to keep them “on ice” since we have to hop on a plane with them for a few hours.
You can make the homemade Magic Shell with three ingredients (you can keep it to two if you’d like), and it’s really easy to make. I used bread and butter pickles here, but I cannot wait to try it with dill pickles!
I added red, white, and blue candy sprinkles over the top, and voila: the perfect treat for my soon-to-be Airman nephew. Make a batch for your next party and watch everyone oooh and ahhh over them!

Ingredients
- 1 (16-ounce) jar sliced bread and butter pickles
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
- Optional: 1/2 teaspoon unsweetened cocoa powder
- Optional: candy sprinkles
Instructions
- Place the pickle slices on a baking pan lined with a few paper towels to absorb some of the liquid. Transfer them to a baking pan lined with parchment or waxed paper and place in the freezer until very cold (at least 20 minutes). Don't skip adding the pickles to the freezer, as the homemade Magic Shell coating won't harden if the pickles are not very cold.
- Meanwhile, combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat 15-20 seconds at a time, stirring, until melted.
- Add the cocoa powder if using and mix until combined.
- Remove the pickles from the freezer. One at a time, dip half the pickle slice in the chocolate mixture and, if using sprinkles, add them quickly before the chocolate hardens. Place back on the parchment or waxed paper-lined baking pan.
- Enjoy immediately. If saving for a bit later, keep the pickles in a cool place.
