Simple Mediterranean Tuna Salad came to mind once I popped my head into my pantry and figure out a good use for the beans and tuna I had accumulated. As a bonus, I used the lettuce that’s been growing like crazy in my backyard raised bed garden. It’s so exciting!
It’s not impossible to have a great garden in the summer in Phoenix, but it takes a LOT of work. It’s really still spring (but temps are already in the triple digits here) so the lettuce has a fighting chance without too much effort. We’ll enjoy it as long as we can!

Ingredients
- 8 ounces chunk tuna in water, drained
- 1 (15.5-ounce) can cannellini beans, drained
- 1/4 cup diced Mediterranean-style olives black and-or green
- 3 large radishes, sliced and quartered
- 2 tablespoons diced white onion
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Ground black pepper and salt to taste
- 2 tablespoons fresh parsley, minced
- Salad greens
Instructions
- In a small bowl, combine the lemon juice, olive oil, and a pinch of salt and ground black pepper. Whisk to combine.
- In a large bowl, add the tuna, cannellini beans, olives, radishes, and onion. Add the parsley.
- Drizzle the lemon-olive oil mixture over the top and lightly toss to coat.
- Serve the tuna salad on top of lettuce greens, or on a slice of bread.
