I’m always up for dessert. Especially one that includes fresh fruit! These Fresh Fig Crumble Bars are definitely a treat to enjoy while figs are in season. They are really rich — indulgent and delicious!
I’ve talked before about having a giant, beautiful fig tree in the backyard, and how the birds always, ALWAYS get to the fruit before we do.
Every season my family asks me, “Did the figs come yet?” My answer is typically, “The birds got ‘em all.” But this year? This year has been a little different!
We actually have a lot of figs that we can pick and enjoy. It’s really the first time in many years this has happened. Who knows why? Maybe the birds are all staying home like we humans have been doing?
The Fresh Fig Crumble Bars are the treat you need if you’ve been looking for a fruit-filled, rich and classic dessert. My recipe is a variation of a Betty Crocker recipe. I’ve made some adjustments, and I use fresh figs in my recipe.

Ingredients
- 1/2 cup butter, room temperature
- 1/4 cup sugar
- 1/4 teaspoon vanilla extract
- 1 cup flour
- 1-1/2 cups fresh figs, stems removed, chopped
- 2 tablespoons lemon juice
- 1/4 cup sugar
- 1/8 cup water
- 5 tablespoons flour
- 1/4 cup brown sugar
- 6 tablespoons rolled oats
- 1/4 teaspoon ground cinnamon
- 3 tablespoons cold butter, cut into small pieces
Instructions
- Preheat the oven to 350 degrees F. Lightly spray a 8x8-inch pan with nonstick cooking spray (or coat it with a bit of butter). Set aside.
- Combine the butter, sugar, and vanilla extract in a medium bowl and blend with a mixer until smooth. Add the flour and continue to blend until combined.
- Add the mixture to the pan. Use your fingers to gently pat down the mixture to make sure it’s spread out evenly.
- Bake for about 15 minutes. Remove from the oven and set aside.
- While the crust is baking, add the figs, lemon juice, sugar, and water to a saucepan over medium-high heat. Stir and add a lid to the pan. Cook, stirring occasionally, for 15-20 minutes.
- When most of the liquid has been absorbed, remove the pan from the heat.
- Add the flour, brown sugar, cinnamon, and oats to a bowl, use a spoon to combine the ingredients. Add the cold pieces of butter to the mixture.
- Use a pastry cutter or two forks to work the butter into the mixture. The crumble mixture should be a little clumpy.
- Spoon the warm fig mixture evenly over the crust. Evenly spread the crumble mixture over the top.
- Bake for 20-25 minutes or until the top is golden.
- Remove from the oven and allow to cool before cutting into squares. Once cool, cut into three even rows, then again in the opposite direction.
