One of my favorite things to make and eat, or order out at restaurants (because really, how can you go wrong?) is bruschetta. Sometimes I beg my husband to make it for dinner.

I could eat bruschetta for every meal! This is easy to make and you’ll love the flavors: the rich mascarpone holds together the slightly bitter radicchio and the lightly sweet grilled asparagus. The sweet and tangy balsamic glaze over the top is its crowning glory.

Lately we’ve been sharing meals and baked goods and any extra food (like mistakenly delivered grocery items) with our neighbor. We shared food before we were all stuck in our homes, but now it just seems like we should.
Maybe it’s because we don’t get to grocery stores or restaurants like we used to, or of the irrational fear that we won’t get something we need from the store. We’ve also been trying to use what’s in the fridge for our meals, and I knew the leftover radicchio needed a purpose.
Recently, our neighbor called and asked if we wanted a loaf of Italian bread the grocery store substituted in her order. Bread? Uh, yes, please. It was a bit dry for sandwiches, so we decided that it would be perfect for bruschetta.
This bread was pre-sliced, and a little thinner than I’d use for bruschetta, but it worked well. My husband grilled it along with the asparagus. Next, I slather each slice of bread with the creamy mascarpone, piled on the radicchio and asparagus pieces, then drizzled the balsamic over the top.

Ingredients
- 6-8 pieces of Italian-style bread, sliced about 2-inches thick, grilled
- 8 asparagus spears, grilled, then cut into 1-inch pieces
- 1/2 cup radicchio, chopped into strips
- 3 ounces mascarpone cheese
- Balsamic glaze
Instructions
- Divide the mascarpone cheese and spread it over each slice of grilled bread.
- Evenly divide the radicchio and add a small pile to each slice of bread.
- Add about one chopped asparagus spear to the top of each slice of bread.
- Drizzle with the balsamic glaze over the top.
