I visited with my niece over the Thanksgiving holiday and she couldn’t wait to make cinnamon rolls with me (and drink bubble tea, and have movie nights, and, and…)! The day after Thanksgiving we indeed made these no-rise, Easy, Kid-Friendly Cinnamon Rolls. In fact, we made them again a few days after that, too!
My 10-year-old niece and her class have been studying about and making different breads. Kids bring in different recipes to try, and her classmate brought in this recipe for Quick Cinnamon Buns from The America’s Test Kitchen Family Cookbook.
I’m so glad I had the chance to try these because I can’t wait to make them again! They’re easy to make and there isn’t a lot of waiting around because this is a no-rise recipe. Yay!

What a great and creative way to practice reading, how to follow directions, how to measure things/portions, a little science, and patience! If you have the chance, I recommend giving these cinnamon rolls a go with your kiddos!
Another thing I was able to share with my niece was how to make your own buttermilk for a recipe if you don’t have any (we didn’t, and the recipe called for it): Add a tablespoon of white vinegar or lemon juice to one cup of milk. Let it sit for 5-10 minutes without stirring. Tiny curdles will form on the top when it’s ready to use.

Easy, Kid-Friendly Cinnamon Rolls make eight rolls, and they’re deliciously dense and have just the right amount of a sweet-and-cinnamon mix. We adjusted the quantities for the glaze the second time we made these because we had way too much the first time. Yes, they’re so good we made them again a few days later!
Are your kids or little loved ones interested in cooking? My niece and I also made pretzels, which was super-fun and really tasty as a fun snack. Cooking and baking is a great way to enjoy the “fruits” of your labor and I think it really gives young ones a sense of accomplishment.
The steps involved in making these rolls include the following:
- Make a tasty cinnamon-sugar mix by adding the brown sugar, granulated sugar, cinnamon, salt, and melted butter together. Stir together. That gets set aside until after you create the dough.
- For the dough, add the flour, sugar, baking powder, baking soda, and salt together.
- Add the buttermilk to the flour mixture and stir until shaggy.
- Turn the dough onto a floured surface and knead for a minute or so.
- Press the dough into a rectangle sized 9×12 inches. Brush the dough with some melted butter.
- Generously sprinkle the cinnamon-sugar mixture over the rectangle. Roll the dough up into a long log and measure out 8 even pieces before cutting them (an adult can assist with the knife).
- Butter a 9-inch cakepan and place the pieces spaced out evenly around the edge of the pan with one of the pieces in the center. You’ll want space between each piece. Brush with a bit of melted butter.
- While the rolls bake, create the glaze by mixing together a bit of softened cream cheese, confectioners sugar, and some milk.
- Take out the cinnamon rolls and let them cool just slightly before drizzling with the glaze.
- Carefully remove the rolls individually from the pan and enjoy!

Ingredients
- ¾ cup packed brown sugar
- ¼ cup granulated sugar
- 3 teaspoons cinnamon
- 1/8 teaspoon salt
- 1 tablespoon unsalted butter, melted
- 2-1/2 cups all-purpose flour, plus extra to dust the work surface
- 1-1/4 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1-1/4 cups buttermilk
- 6 tablespoons unsalted butter, melted, divided
- ¼ cup cream cheese, softened
- ½ cup confectioners sugar (more if needed)
- 3 tablespoons milk (more if needed)
Instructions
- Mix all the ingredients in a small bowl until combined. Set aside.
- Preheat the oven to 425 degrees F. Butter a 9-inch round baking pan around the bottom and up the sides. Set aside.
- Combine the flour, baking powder, baking soda, and salt in a large bowl. Whisk to combine.
- In a small bowl, whisk together the 2 tablespoons of the melted butter with the buttermilk.
- A little at a time, add the buttermilk mixture to the flour mixture, stirring with a wooden spoon until combined. The dough should be shaggy, as you’ll knead it together shortly.
- Lightly dust your work surface with some flour. Transfer the dough to the floured surface.
- Knead the dough for about a minute, until it’s smooth.
- Using your hands, shape the dough into a 9x12-inch rectangle. Brush with two tablespoons of the melted butter, leaving about a ½-inch boarder around the edges.
- Evenly spread the cinnamon-sugar mixture over the buttered dough, again, up to the ½-inch boarder. Use your fingers to gently press the mixture down onto the dough.
- Use a spatula or bench scraper to loosen the dough from the surface, all the way around.
- Starting at the long end of the rectangle, roll the dough into a log, pressing lightly as you go. Pinch the ends of the log.
- Measure with a knife, but without cutting, eight even sections of the dough log. With a sharp knife, slice the sections and place them into the buttered pan, around the edges with one piece in the center. You want to leave some space around each piece.
- Brush the remaining melted butter over the tops of each piece.
- Bake for 20-25 minutes until golden. Remove and allow to cool slightly before adding the glaze.
- As the cinnamon rolls bake, make the glaze by combining the cream cheese, confectioners sugar and milk. Add a little more sugar as needed to thicken, or a little more milk to thin the glaze.
- After the cinnamon rolls have cooled for about five minutes, use a spoon or fork to drizzle the glaze all over the tops of the rolls.
- Gently remove the rolls individually from the pan and serve warm.
