Grilled Watermelon with Feta, Mint, and Balsamic Glaze is the perfect appetizer for the summer season. With your grill getting lots of action this season, be sure to try this appetizer that’s fun to serve and so easy to put together.
This isn’t exactly a recipe — more like instructions on how to put together a tasty starter. It takes hardly any time or effort to get this grilled watermelon appetizer on the table, and it’s definitely a fun and fresh dish for the season.
I love the sweetness and caramelization of the grilled watermelon combined with the salty feta, the earthy mint, and the tangy balsamic glaze. And really, what says, “summer” better than watermelon?
For anther grilled and slightly unexpected dish, make my Grilled Romaine Salad with Caesar Dressing. You’ll love the flavors!
I had a bit of a crazy week: I ended up in the ER (all is okay, thankfully), and my beloved Cavaliers lost in the NBA Finals. That second part is maybe a little more upsetting to me than the first, and I’m pretty sure the two events might actually be related!
Anyway, I was checked out thoroughly at the hospital, but it took all. day. long. When I got home, I just wanted to chill and watch my Cavs win game four.
My husband ran to the grocery store and came back with an array of goodies for dinner in the form of an antipasto. Oh, and also a bagful of junk food: my favorite candy bar, my favorite ice cream, my favorite chips (dill pickle flavored), and caramel corn.
Try my Easy Antipasto as a light meal when you really don’t feel like cooking. It includes artichoke hearts and hearts of palm, too.
I’m pretty sure the checkout person thought he had the munchies, but he was just being thoughtful and trying to cheer me up (how sweet, right)! Wisely, I didn’t indulge in everything he brought home or I might have ended up back at the hospital.
Over the next few days, I started to get back on track with healthier foods. Since we had a watermelon on the counter and a few friends stopping over, I decided to make Grilled Watermelon with Feta, Mint, and Balsamic Glaze as a fun dish to start our meal.
Our grill is open almost all year, but definitely in the summer. You too? Try my Grilled Angel Food Cake with Roasted Blueberries the next time you’re out grilling. It makes for a simple and delicious dessert.
The next time you have your grill going, try this watermelon appetizer. I love it. It’s simple and tasty, and almost effortless to put together. I grilled mine in a pan on the stovetop, but it’s equally as easy to make outside.
Don’t waste an opportunity get a fabulous and fruity appetizer on the table. Try my Grilled Watermelon with Feta, Mint, and Balsamic Glaze the next time you fire up your grill!
