If you have a favorite vacation spot, I’m willing to bet there’s a favorite food you always enjoy when you’re there. For me, one of those foods is granola from my favorite breakfast restaurant in La Jolla, California.
Now, if you’re thinking, “Granola is your favorite vacation food?” you probably haven’t ever had the homemade granola at The Cottage. I was just there and bought a bag to take home. I’ve been enjoying it all week.
Make Granola with Blueberries and Pecans for a Taste of Vacation
You can bet that I need more vacation time in my life and the only way for me to get it right now is from this favorite breakfast cereal! This granola is versatile: You can snack on it by itself (I did that as it was cooling), eat it with milk or plain yogurt and fresh fruit, or sprinkle it over ice cream.
It’s so easy to whip up a batch of granola in your own kitchen. In addition to the dried blueberries and crunchy pecans, this cereal has a special ingredient you won’t find in my chunky cherry-chai granola.
I’m pretty sure it’s the same ingredient that makes my vacation cereal taste so darn good! Have I grabbed your attention? That “something special” is sweetened condensed milk.
That’s the ticket. While sweetened condensed milk might not be an especially healthy ingredient (it’s used mostly in desserts after all), think of this homemade granola with blueberries and pecans like vacation itself: Something to indulge in from time to time.
I was telling my neighbor that I was going to be busy reliving my vacay and making myself some homemade granola. She mentioned that the salad she ordered recently at a local restaurant has granola sprinkled over it. What a great idea! I can’t wait to toss it over one of my favorite salads.
