Have you ever heard of the Jennifer Aniston Salad? It’s everywhere on the Internet and for good reason! Supposedly, Jennifer Aniston made (a version of) this salad and ate it every day for 10 years on the set of Friends.
When I read about it, I thought it had to be good if it was a day-in and day-out staple for 10 years! My version is different from what I read was “Jennifer’s” version, but it’s pretty close and it’s definitely tasty.
I read the original version was made with bulgur wheat (I use quinoa), feta (I’ve used both feta and crumbled cheddar), and mint (I prefer lots of dill in my version). And that’s what’s nice about this recipe: You can easily swap ingredients for your favorites.
I made this hearty salad when I visited my family for Christmas. I was excited to find that everyone (even the picky eaters) loved it! It’s a filling salad, too — it’s definitely a salad that can serve as the main part of a lighter meal.
The dressing is simple and fresh and vibrant: lemon juice, olive oil, and honey sprinkled with salt and black pepper. It’s one of my favorite things about this salad!
Quinoa and chickpeas are the building blocks of this hearty salad. Both quinoa and chickpeas are good sources of fiber and protein so you’ll stay full if they’re part of your meal.

Jennifer Aniston Salad
I’m in love with so much about this salad (no wonder it was a supposed staple)! My favorite things about it are the dressing – it’s super-paired down with just lemon juice, olive oil, and honey, and honestly, I love the fresh dill tossed into the mix. For my taste, the more the merrier and I combine it with fresh parsley.
The other bits and bites of this filling salad include:
- Cucumber
- Red onion
- Radish
- Fresh dill and parsley (pick your favorite herbs but I think these two are a great combo)
- Crunchy pistachios (or choose almonds or walnuts)
- Crumbled bits of cheddar (and feta is tasty, too)

Ingredients
- 1, 15-ounce can chickpeas, drained and rinsed
- 1 cup dry quinoa, cooked according to package directions, then cooled
- 3/4 large cucumber, diced (I used an English cucumber)
- 2/3 cup diced radishes
- 1/2 cup red onion, diced
- 1/3 cup fresh parsley, chopped
- 1/3 cup fresh dill, chopped
- 1/2 cup roasted pistachios
- 1/2 cup (or a bit more to taste) good-quality crumbled cheddar cheese
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 1 tablespoon honey
- Salt and black pepper to taste
Instructions
- Whisk the ingredients and adjust according to taste. Set aside.
- Once the cooked quinoa has cooled, add it to a large bowl with the chickpeas, cucumber, radish, onion, herbs, and pistachios.
- Stir or shake the dressing again, then pour it over the salad and gently toss.
- Add the cheese to the salad and gently toss it together.
- Serve and refrigerate any leftovers.
