Good thing I had good lettuce and cherry tomatoes on hand! I was able to pivot and make this BLT Salad with Garlic-Basil Dressing. Mmm! A classic sandwich in salad form –delicious!
Like the sandwich, this BLT Salad with Garlic-Basil Dressing includes sweet tomatoes and salty pieces of bacon. For the “bread,” my husband made his famous croutons that I can’t keep my hands off!

The dressing? Well that’s something that adds a whole bunch extra to this salad. I was going to use it on the sandwiches I dreamed of making, but it turned out to be just perfect for the salad.

Ingredients
- 6 ounces favorite lettuce greens
- 1 cup cherry tomatoes, halved
- 5 slices cooked bacon, torn into small pieces
- 1/4 cup mayonnaise
- 1/4 plain Greek yogurt
- 2 cloves garlic
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 teaspoon lemon juice
- Zest from 1/2 small lemon
- 15 basil leaves
- 1-1/2 cups Italian-style bread torn into 2-inch piece
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons grated Parmesan cheese
Instructions
- Mince the garlic on a cutting board, and sprinkle the salt over it. Use the back of a knife to rub the salt and garlic together back and forth until it forms a smooth paste.
- Add the mayonnaise, yogurt, garlic paste, black pepper, lemon juice and zest, and the basil leaves to a food processor.
- Pulse until the basil is in small pieces. Stir to combine.
- Refrigerate until ready to serve.
- Preheat the oven to 400 degrees F.
- Add the oil, salt, black pepper, and cheese to a bowl. Add the bread and toss with your hand to coat.
- Transfer the pieces of bread to a baking pan and bake for 5-10 minutes or until it begins to turn golden.
- Remove and set aside.
- Add the salad greens, tomatoes, and bacon to a bowl. Drizzle about 6 tablespoons of the dressing over the ingredients and toss to combine. Add a bit more dressing if you’d like.
- Add the croutons, toss and evenly divide between salad bowls.
